Anything Bars

Every week I make some kind of a raw snack that's an easy grab for when I'm peckish or wanting a sweet treat (daily). These need to fill me up and get me through until my next meal so they are dense and full of super, power food! I just raid the pantry for any nuts, seeds, oats, coconut, dried fruits, and chocolate, use what you have got. Every week it's a different creation based on what flavours I feel like at the time.

Anything you have, anything you love, any substitute for the same kind of ingredients, use that!

These bars can also be balls, just roll 1 tbsp of mixture in your hand into a ball shape.

Ingredients

1 cup oats

2 cups of any seeds/nuts/coconut

10 dates

4 tbsp tahini or nut butter

5 tbsp coconut oil, melted

1 tbsp water

¼ cup honey/maple or rice malt syrup

Pinch sea salt

½ tsp cinnamon

½ cup dried fruit e.g. dates, sultanas, figs, cranberries

½ cup dark chocolate, roughly chopped

Method

Place oats, seeds/nuts and dates into a kitchen whizz or blender. Blend for 30 seconds until it resembles a fine crumb, you still want some texture.

Pour dry mix into a medium-sized bowl and add tahini, coconut oil, water, honey/maple, sea salt, cinnamon and mix to combine. Stir through the dried fruit and dark chocolate. Your mixture should be sticky.

Line a loaf tin with baking paper and place the mixture in the tin. Press the mixture down with the back of a dessert spoon until you have a compacted slice with a smooth top.

Allow to firm up in the refrigerator for 2-4 hours before slicing into bars or bite-size pieces.

Store in an airtight container for 1 week or keep in the freezer and pull out as you need.

Extra Tips

Gluten-free: Substitute oats for more coconut and seeds

Love chocolate: Add 1 Tbsp of cacao/cocoa to your dry mix and you will end up with chocolate muesli bars.
