Oat Loaf.
This oat loaf is super easy and only uses staple ingredients. It is very filling and great to have toasted alongside soup or with peanut butter and tomato slices on top. I have this on hand for a quick breakfast, snack or addition to lunch. Keeps for up to 5 days and best toasted.
Ingredients
450g quick oats
1/2 tsp sea salt
2 tsp baking soda
6 tbsp mixed seeds
1 egg
500g natural unsweetend yoghurt
+ 1 tbsp of extra seeds for on top of loaf
Method
Preheat oven to 180 deg celsius.
Combine all ingredients in a medium bowl and mix together well.
Spoon mixture into a lined loaf tin, sprinkle with extra seeds and place in the oven for 50 minutes.
Makes 1 loaf.
