Sweet & Sour Sticky Onions
Are you ready for these sticky onions to become a staple in your cooking? They are THAT GOOD. These are such an easy way to level up your salads with a burst of flavour, along with being a great addition to frittatas, grazing boards, mashed potatoes, slow-cooked meats, and pizzas.
Ingredients:
1 red onion
2 tbsp olive oil
Good grind sea salt
2 tbsp apple cider vinegar
1 tbsp maple syrup
Method:
Slice both ends of your red onion, peel off any dry layers and slice the onion in half. Finely slice red onion, as fine as you can.
Heat a frying pan over medium heat, add oil, sliced red onion, and a good grind of sea salt. Cook for 15 minutes, stirring every few minutes to evenly cook. The onions will break down and become very soft and translucent.
Stir in apple cider vinegar and maple syrup, and cook for a further 2-3 minutes until onions have become sticky and any excess liquid has evaporated.
Remove from heat and allow to cool. Store in an air-tight jar.
Keeps for 7 days in the refrigerator.
